Chemical interesterification of babassu fat and palm oil influence on melting point softening point and solid fat index

Interesterification reactions of various blends of babassu fat and palm oil, catalyzed by sodium methoxide, were performed. Melting point and softening point of the interesterified products increased as compared with the uninteresterified mixtures. Solid fat index of the original mixtures and of the products of interesterification were determined by dilatometry. The random interesterified fats became more plastic. The drawing of isosolid lines showed that babassu fat and palm oil form an eutetic mixture.
