The carotenoid pigments from the fin and skin of cultured salmonids (Japanese char, brook trout, lake trout, masu trout, red-spotted masu trout, rainbow trout and brown trout) were investigated in regard to carotenoids in their feeds. The major carotenoids in these species were zeaxanthin, 3'-epilutein or canthaxanthin, which may originate from carotenoids in their feeds. The carotenoid constituents of cultured fish were greatly influenced by the carotenoids in their feeds.
