Compression tests on intact golden delicious apples and correlation with other objective measures for quality evaluation

Golden Delicious apples gathered from hill and Po valley [Italy] orchards, on 3 dates, were measured for diameter, weight, specific gravity and color of skin; the apples were then subjected to compression test between 2 plates with Instron, and were analyzed for soluble solids, total and reducing sugars, titratable acidity and pH. The measures were repeated after storage, when apples were also scored by a taste panel for firmness, sourness, sweetness and aroma. From curves force-deformation recorded during compression tests, the slope of curve, modulus of deformability, apparent modulus of elasticity, and degree of elasticity and energy dissipated in the first cycle of compression were computed. The differences between the fruits from the 2 localities were high and consistent from all the parameters. Apples grown on the hills had higher modulus of deformability and recovered more deformation than apples from the plain. Modulus of deformability increased with delay of harvest. All the parameters of compression were highly correlated with each other; modulus of deformability was the least affected by size of fruit. It was confirmed that measures taken at low deformation give more resolution. Compression parameters were correlated with sugars and sucrose content and were affected by water loss of fruit, but were not correlated with sensory firmness.
