The interaction of a cationic, anionic and an amphoteric surfactant with lecithin films at the air/water and xylene/water interface was studied at the isoelectric point of lecithin (pH .simeq. 2.9). Surface and interfacial tension, surface elasticity and viscosity measurements showed that the interaction leads to the formation of a less elastic film and there may be some displacement of lecithin from the interface. Such mixed films were less effective in stabilizing the resulting emulsion against coalescence when compared with lecithin alone. Thus, it seems that the stability of the emulsion against coalescence is more governed by film elasticity than electrostatic charges.
