Laboratory investigation of possible penetration of benz pyrene into wheat grain with different modes of drying with combustion products

Possible accumulation of benzpyrene in wheat grain during drying a heat carrying agent (air diluted combustion products) containing this carcinogen was studied in a laboratory set-up. With benzpyrene in the heat carrier in an amount of 0.2 g/m3 this carcinogen accumulated in the grain with all conditions and methods of drying studied. An increased benzpyrene content in the grain by comparison with the background content was noted under optimal conditions of drying in a solid layer, boiling layer and a suspended state by as much as 23, 11 and 3 times, respectively. On the basis of these and literature data, grain may be dried in a suspended state (recirculation dryers) under definite, practically realizable conditions without accumulation of benzpyrene.
