A study was conducted with two groups of ewes, in first lactation, belonging to the flock of the institute of cattle and sheep breeding at Stara Zagora. The animals were equalized on basis of age and time of lambing (first week of February). The purpose of the study was to establish milk yield, composition, and properties of milk of native Stara Zagra ewes and ewes crossbreds with East Friesian rams. Crossbreeding of native Stara Zagora ewes with East Friesian rams increased milk production. Crossbred ewes released with milk a higher quantity of fat, total protein and casein on account of higher milk production. Their milk casein/fat ratio was more appropriate for production of white brine cheese. Differences in properties of milk of the studied groups of ewes were not established. Milk of crossbreds showed better coagulability.
