Quality of grain proteins in low protein and high protein forms of corn

High-protein forms of maize as compared to the ordinary ones, contain in the soluble proteins lower amounts of histidine and arginine but greater amounts of threonine, glycine, alanine, valine, isoleucine and tyrosine; in the residual proteins there is less histidine, arginine, proline, glycine and tyrosine but more alanine, leucine and phenylalanine. The amino acid composition of reserve proteins (alcohol- and alkali-soluble) was practically the same. Data on the amino acid analysis are explained by heterogeneity of the protein fractions detected by the method of discelectrophoresis in polyacrylamide gel.
