In the course of a microbiological study on kusaya (dried mackerel) fermentation, many strains of bacteria from the kusaya brine which contained organic substances in very high concentration were isolated. The growth response of the isolated bacteria to different concentrations of peptone and bonito extract in media was studied. Results showed that these bacteria required high concentrations of these organic substances.
