Grains of Quinoa, Chenopodium quinoa (Chenopodiaceae), have been used as a staple food in the Andes, South America. From brans of grains of this plant, five new saponins were isolated and their structures were elucidated as 28-O-.beta.-glucopyranosyl esters of hederagenin 3-O-.beta.-glucopyranosyl-(1 .fwdarw. 3)-.alpha.-arabinopyranoside and 3-O-.beta.-glucopyranosyl-(1 .fwdarw. 3)-.beta.-galactyopyranoside, and 28-O-.beta.-glucopyranosyl esters of phytolaccagenic acid 3-O-.alpha.-arabinopyranoside, 3-O-.beta.-glucopyranosyl-(1 .fwdarw. 3)-.alpha.-arabinopyranoside and 3-O-.beta.-glucopyranosyl-(1 .fwdarw. 3)-.beta.-galactopyranoside.
