Spectral fluorescent investigation of chromophores forming in the course of lipid per oxidation

Electronic absorption and fluorescence spectra of lipid peroxidation products of egg yolk in solution were investigated. The spectra obtained are complex and represent the superposition of spectra of a number of chromophores. In lipid peroxidation processes not only structures with a small number of conjugate double bonds, diene and triene, but more complex conjugate systems, tetraene, pentaene and others, are formed. For the lipids studied the dependence of maximal wavelengths of the excitation spectra on the number of conjugated double bonds in lipid peroxidation products is linear, which confirms the formation of conjugate structures in the course of oxidation. The chromophores formed by peroxidation of phospholipids of different origin have similar excitation and fluorescence spectra.
