Abstract
A microscopy study conducted to assess whether contracture bands, early autolytic changes, or other ultrastructural changes could be detected in bovine muscles during the first day following low-voltage electrical stimulation (ES) found advanced myofibrillar degradation. The observed proteolytic changes was associated with the depletion rate of muscle energy stores during ES and with a subsequent improved tenderness. Ancillary findings also are discussed. (wz)
