Proportion of plump kernels, 1000-kernel weight, grain and malt protein, wort nitrogen and Kolbach index increased with increasing levels of nitrogen. Application of nitrogen however, did not influence extract yield, fine/coarse extract difference, colour and pH of wort, apparent final attenuation and viscosity. There was a differential response of varieties to the above barley and malt characteristics except wort pH, viscosity and apparent final attenuation.
