Molds (67) were isolated from fermented Chinese hams. Among these isolates, 50 strains were identified as Aspergillus, 6 were Penicillium and 11 were Rhizopus and other genera. Two strains of the aspergilli isolated were A. flavus but no aflatoxins were produced when grown in YES medium. Procedure for quantitative analysis of aflatoxins in fermented ham was proposed using high pressure liquid chromatography with aporopriate cleanup procedures. Average recoveries of aflatoxin B1, B2, G1 and G2 at 5 and 20 ppb were 77.3-91.0 and 75.0-86.0%, respectively. Samples (30) of fermented. Chinese ham were analyzed and found to be free of aflatoxin contamination.
