Surface activity of products based on fats and carbohydrates ii. 1 2 3 o n octanoyl d mannitols
1-O-n-Octanoyl-D-mannitol was synthesized by selective monoesterification of D-mannitol with octanoyl chloride in pyridine. 2-O-n-Octanoyl-D-mannitol and 3-O-n-octanoyl-D-mannitol were obtained by esterification of 1,3;4,6-di-O-benzylidene-D-mannitol, or 1,2;5,6-di-O-isopropylidene-D-mannitol, with octanoyl chloride, in pyridine, and subsequent hydrolysis of intermediate esters with aqueous trifluoroacetic acid. The variation of surface tension with concentration is studied, at 20; 30 and 40.degree. C, for aqueous solutions of these three D-mannitol esters. The critical concentration for micelle formation, as well as corresponding value of the area per surfactant molecule of Gibbs surface excess, are determined. The surface active behavior of these esters, as a result of short length of lipophilic chain, changes significatively with small variations in hydrophilic character of their alcoholic groups.
