The prevalence of escherichia coli in meat samples in benin city nigeria

Twenty samples of meat including fresh beef, fresh pork, fresh goat, dried beef and fried chicken were analyzed for the prevalence of E. coli. Fresh pork and fresh beef had the highest E. coli of 1.01 .times. 109 and 8.5 .times. 108/g of meat, respectively. Fresh goat meat had 4.9 .times. 108, fried chicken 4.7 .times. 108 and dried beef 2.2 .times. 108 E. coli/g of meat. Such high counts in the food sampled indicate that gastroenteritis may be induced in the consumer.
