Coulometric determination of caramel acidity



Izvestiya Vysshikh Uchebnykh Zavedenii Pishchevaya Tekhnologiya (5): 79-80



A description is given of a rapid coulometric method for determining caramel acidity. The results obtained from the coulometric study were compared to those from the titrimetric study for orange, barberry, lemon and duchess per caramel. The coulometric method produced similar results but was less expensive than the titrimetric method.
