Effect of pyruvate on diacetyl and acetoin production by lactobacillus casei and lactobacillus plantarum

Pyruvate stimulates the growth of Lactobacillus casei and L. plantarum both in complex and synthetic media. L. plantarum ATCC 10241, CRL 56 and L. casei CRL 75 and CRL 200 use pyruvate adequately in synthetic medium with or without glucose. The utilization of pyruvate leads to the induction or stimulation of the biosynthesis of diacetyl in all these lactobacilli. When using a synthetic medium with pyruvate as the sole carbon source, 10-20 .mu.g diacetyl/ml is formed, while up to 90 .mu.g diacetyl/ml is formed when both glucose and pyruvate are present. L. casei and L. plantarum form about 30 .mu.g diacetyl/ml in complex medium, up to 900 .mu.g acetoin being produced under these conditions, with CO2 release. For diacetyl formation the synthetic medium has proved to be more efficient than the complex one.
