Effect of water activity on growth and lipids of xerophilic fungi aspergillus repens and aspergillus amstelodami

Xerophilic fungi Aspergillus repens and A. amstelodami were grown at 0.98, 0.96 and 0.94 aw. Mycelial growth of A. repens was greater than that of A. amstelodami, optimum growth occurred at 0.96 aw. Growth at different water activities affect the pattern of fungal lipids. Saponified lipids, phospholipids and saturated fatty acids were accumulated at lower aw.
