Effects of sodium chloride propionic acid and ammonium hydroxide on growth of aspergillus flavus on corn and aflatoxin production
Inhibitory effects on growth and aflatoxin production of Aspergillus flavus in ground corn by sodium chloride, propionic acid and ammonium hydroxide were examined. Sodium cholride at concentrations of 40 and 80 mg/g could inhibit only aflatoxin production while 120 mg/g of sodium chloride inhibited both growth and aflatoxin production of A. flavus in corn after 7 and 14 days of incubation. The addition of propionic acid to the corn at concentrations of 500, 1000 and 1500 .mu.g/g enhanced the production of aflatoxin whereas 2000 and 2500 .mu.g/g of propionic acid inhibited the formation of aflatoxin. Two parts per thousand of ammonium hydroxide reduced the production of aflatoxin in corn by 45% and 60% at days 7 and 14, respectively while 0.5, 1.0 and 1.5% ammonium hydroxide completely inhibited the production of aflatoxin. The addition of ammonium hydroxide in the 7 and 14 day-old cultures showed that the higher the concentration used, the lower the aflatoxin detected.
