The dynamics of gustatory perception and glycemic response under glucose tolerance disorders

Two hundred and four medical students were examined using questionnaires and a screening test developed by the Institute of Experimental Endocrinology and Hormone Chemistry, Academy of Medical sciences, Russia. A risk group of 8 people (1 man and 7 women) with the risk coefficient higher than 3 was specified. These individuals supposedly had a higher probability of developing a pathology in carbohydrate metabolism. Further studies of functional mobility of gustatory analyzer and glucose tolerance were performed. Glucose tolerance tests were conducted on an empty stomach, and 15 minutes, 1 hour and two hours later after peroral administration of 75 g of glucose. The studies showed that mobilization of tongue gustatory papillae, glucose homeostasis, and correlations between particular parameters had certain disorders in subjects of the risk group. It was confirmed that gradual dependence of mobilization level of tongue gustatory papillae on glucose content in blood reflects the active systemic nature of gustatory perception. The functional mobility method used in gustatory perception studies proved valuable in investigating changes in homeostasis.
