Own checks in abattoir: Verification of slaughter hygiene by microbiological examination of beef carcasses

The legally requested own checks lies within the responsibility of the food producer. In slaughterhouses, part of theses own checks are carried out by periodical microbiological examinations of carcasses as verification of the slaughtering hygiene. The continuous record of the results by means of quality control charts clearly indicates changes in the surface contamination, which supports the disclosure of hygiene problems and allows to initiate appropriate regulation measures.
