Studies on the biologically active substances in tea infusion using microorganisms

Antimutagenic and antimicrobial activities of tea extract were examined. Antimutagenicity was determined by a modified Ames method using Trp-P-1 as indirect mutagen and 1-NP as direct mutagen. In Ames test, Salmonella typhimurium TA 98 was used. Antimicrobial activity was examined by measuring Minimum Inhibitory Concentration (MIC), using 9 strains of food-borne diseases. One of the strongest antimutagenicity was shown by (-)- epigallocatechin gallate (EGCG), and the contribution to the inhibitory activity against Trp-P-1 by catechin compounds was 64% to 99.9%. From these results the other compounds were tested for antimutagenicity. Volatile compounds such as geraniol, beta-ionone, nerolidol, cis-jasmone and linalool oxide were found to exhibit antimutagenicity. As for antimicrobial activity, EGCG exhibited strong effect. Nerolidol, geraniol and nerol also exhibited strong effect on the bacteria.
