Pasta filata cheese originated from Italy. Based on the curding method, there are enzyme mediated stretched curd and acid mediated stretched curd. Pasta filata can also be classified as matured or fresh. The research on Mozzarella cheese was mainly focused on replacing the buffalo milk with low-fat or non-fat materials, improving the physical properties and extending its shelf life.
