Essential substance content in different purple sweet potato varieties and effect of processing on purple sweet potato pigments

The essential substances of purple sweet potato (PSP) cultivars were analysed and the changes of pigment content and CIELAB of PSP were studied. PSP A1 had the highest contents of starch, protein and pigment while Chuanshan had the highest contents of reproductive sugar and amino N. The pigment content in Chuanshan was significantly reduced after refrigeration and freezing.
