Esterase activity of enterococci isolated from traditional ewe milk cheeses

41 enterococcal strains (28 Enterococcus faecalis and 13 Enterococcus faecium) isolated from traditional ewe raw milk cheeses were analysed for their esterase activity by a spectrophotometric technique. The detection of esterase activity of the strains was observed on cell free extracts using 4-nitrophenyl-butyrate. The esterase activity was determined spectrophotometrically at 410 nm.
