Reorganization of a hospital catering system increases food intake in patients with inadequate intake

Background: Low food intake is a frequent problem in undernourished hospital patients. Objective: To study whether a reorganization of the hospital catering system to enable patients to choose their evening meal individually, in combination with an increase in the energy density of the food, would increase the energy and protein intake of patients admitted at the Herlev University Hospital in Denmark.
