Cyanogenesis and thiocyanogenesis in food-stuffs

The amounts of hydrocyanic acid produced from a number of foodstuffs by acid hydrolysis and emulsin hydrolysis have been determined. Except in the case of linseed meal, emulsin hydrolysis gave little or no cyanides, but in most cases sulphocyanides were found. It is suggested that this production of sulphocyanides on emulsin hydrolysis is really a process of detoxification. It is also accomplished by the enzymes present in the gastrointestinal tract of rabbits and rats.
