The method previously described (Abst. 48, Vol. 6) has been applied to milk and milk products. In the case of cream and butter, the recovery of added Cu was not always consistent. With dried milks it was found that Na sulphite was a suitable reducing agent for the Fe present prior to the extraction of Cu with diphenylthiocarbazone. For a rapid approximate estimation of Cu in lactose, the aqueous solution may be shaken directly with the reagent after slightly acidifying with H2O4.
