It has been shown that the discolouration of Harzer cheese is due to contamination with Cu, not as was formerly supposed to contamination with Fe. The methods previously recommended for the detection of metallic contamination of cheese, whilst satisfactory for the detection of Fe are not applicable in the case of Cu contamination. A rapid method which gives a measure of the degree of Cu contamination, based on treatment of the cheese with H2O2, guiacum reagent and K thiocyanate is detailed.
