Effect of method of making rye bread on growth in young growing rats

The nutritive values of samples of rye bread, prepared in different ways but from the same meal, were compared in growth experiments with rats. Rye bread prepared as for sale in Konigsberg was found to be markedly inferior to bread prepared by a different and more carefully controlled process.
