Limitations of Tillmans' method for estimating vitamin C, and the behaviour of vitamin C in the presence of protective substances

An extensive critical study of the indophenol titration method of estimating ascorbic acid was carried out with fresh vegetables, dried vegetables, fruit and vegetable extracts, and various rose-hip preparations. The use of HCl and of metaphosphoric acid, and the time and temperature of making extracts, were examined as well as the value of H2S, mercury acetate and copper salts in obtaining the true ascorbic acid content and overcoming the effect of other reducing substances.
