The keeping capacity of cabbage (Brassica pekinensis Rupr.) was studied at a temperature of 2 to 3 degrees C. The amount of C02in the atmosphere and the means of ventilation were important. Samples were analysed weekly and at first about one third of the carbohydrate present was fructose but later only glucose was found. The rate of decay increased in geometrical progression with time of keeping and the flavour of the cabbage was not good.
