IN the second part of this study the av. weights and wt. ranges of the various organs, expressed as percentages of live wt., are given for each of the 5 slaughter grades in oxen, bulls, cows, and heifers separately and regardless of breed. The same data are then classified for lowland and hill cattle. Grade, sex, and breed differences are discussed in detail, and a section is devoted to consideration of the variability of the relative organ weights.
