Ordinary foodstuff analyses have been carried out, on these three pulses and the globulins have been isolated from them, and their amino-acid content determined. Determinations of the biological values of the three pulses, carried out by feeding experiments on rats at a 10 per cent. level of protein intake, show that Cicer arietinum appears to be the best protein food, having the highest net protein value.
