In the course of this exhaustive investigation of certain defects involving a serious depreciation in the market value of German celeriac, the writer discusses a discoloration of the sliced rootstocks known as 'iron- or rust-spot', which was formerly attributed to iron oxidation but has now been traced, by intensive anatomical and rnicrochemical analyses on the Delikatess variety, to the accumulation in special 'excretion vessels' of resinous substances and ethereal oils.
