The effect of commercial sterilization on the nutritive value of milk. 4. Effect on the vitamin B complex, on vitamin B1 and on vitamin B2 (flavin) of milk

The effect of commercial sterilization on the nutritive value of milk. 4. Effect on the vitamin B complex, on vitamin B1 and on vitamin B2 (flavin) of milk

J. Dairy Res 9: 22-29

A comparison of raw and sterilised milk as sole source of the vitamin B complex in the diet of rats indicated that some part of the complex had been destroyed in the process of sterilisation. Specific tests for vitamin B1 were made by means of growth of young rats, and it was calculated that 30 per cent. of the vitamin B1 of raw milk was lost during sterilisation.
