Potatoes are regarded as the chief source of vitamin C in army rations, and the problem of vitamin C deficiency in relation to diseases of the gums is discussed with reference to the literature. Potatoes are estimated to supply 12 to 14 per cent, of the total calories in the German diet, about 500 g. being eaten daily by a man. A study was made of the vitamin C content of potatoes cooked in an army kitchen.
