Addition of metaphosphoric acid to the reagent for extracting ascorbic acid from plant tissues is recommended, since it inhibits oxidation by copper as well as by ascorbic acid oxidase, and thus dispenses with the necessity of hydrogen sulfide treatment, prolonged use of which may cause reduction of substances other than dehydro-ascorbic acid. Such reduced substances may be capable of decolourising indophenol as was found to be the case with heated carrots.
