A method for sucrose determination in condensed milk is described, which avoids errors due to previous partial hydrolysis of the sucrose and polymerization of the resulting fructose. After clarification of the milk and acid hydrolysis of the disaccharides, the glucose, galactose and lactose are oxidized by iodine in alkaline solution, and the fructose determined cuprimetrically.
