The reconstituted condensed milk is defecated by Zn ferrocyanide and the sugars in the filtrates are hydrolysed with H2SO4 in boiling water. After cooling all reducing sugars, other than fructose, are oxidized by iodine after making the solution alkaline, and fructose is then estimated cupri metrically. A formula is given for calculating the amount of sugar originally added to the milk.
