Studies on dairy lactic acid bacteria. III. Lactic streptococci isolated from milk and/or milk products

Of 68 strains of homofermentative streptococci isolated, 30 strains were selected for further study and identified as Streptococcus cremoris (8), Str. lactis (2), str. faecalis (5), Str. bovis (3) and str. thermophilus (3). Typical strains of Str. cremoris were isolated solely from imported commercial powdered cultures; Japanese butter cultures and spontaneously soured milk contained Str. lactis or strains intermediate between Str. lactis and Str. cremoris.
