In an extensive study of the accuracy of routine butyrometic methods for the estimation of fat, the gravimetric methods of Rose-Gottlieb (for cream and dry milk powder) and Schmid-Bondzynski (for butter and cheese), were taken as a standard. For least deviation and greatest accuracy the following methods are recommended: for milk Gerber's, for cheese Van Gulick's, for dry milk powder Teichert's.
