The vitamin enrichment of sterilized milk. A method of replacing the vitamins destroyed during sterilization

The vitamin enrichment of sterilized milk. A method of replacing the vitamins destroyed during sterilization

Milckwissenschaft 7(8): 250-53

The author claims that in his experiments homogenization and sterilization of milk resulted in the destruction of all the vitamin C and of a large proportion of the beta -carotene and vitamin A. He further suggests that the tintometric method, used by British workers for the determination of carotene and vitamin A in milk, is not specific, and hence that their findings (that very little vitamin A is destroyed during the sterilization of milk) are open to doubt.
