Alfa buttermaking plants for the production of sweet-cream- and ripened-cream-butter.

A modified Alfa process, suitable for the conversion of both sweet and ripened cream into butter, is described. The process for ripened-cream butter is as follows: cream (20-40% fat) at 50 degrees -60 degrees C is pumped through the special cream concentrator from which it emerges with a fat content of about 80% and is then pumped through a plate cooler in which it is cooled to 17 degrees -18 degrees C.
