Reichert Meissl and Polenske values and refractive index of fat from 10 samples of genuine butter, 9 samples of margarine, mixtures of butter and margarine, and 26 samples of commercial butter were estimated and the fatty acids of the hydrolysed fats were examined by one-dimensional paper chromatography. It is claimed that cases of adulteration of butter with margarine could be detected from the size of the spot due to butyric acid on the chromatogram.
