The proteolytic activity of 258 strains of lactic acid bacteria and 12 strains of other bacteria isolated from raw milk was estimated by colorimetric determination of tyrosine liberated during incubation. The maximum values of free tyrosine found were 4-38 mg. % for Str. faecalis A-I3 and 4-32 mg. % for Str. lactisB-5.
