Studies on the distribution and properties of lactic acid bacteria in cow's milk in Japan. VII. Acid-producing capacity and acidoduric property of lactic acid bacteria.

Studies on the distribution and properties of lactic acid bacteria in cow's milk in Japan. VII. Acid-producing capacity and acidoduric property of lactic acid bacteria.

Jap. J. zootech. Sci, 30: 3, 134-37

A total of 256 lactic acid bacteria previously isolated were studied. One strain of Str. faecalis was able to coagulate skim-milk within 4 hr. of incubation. Rate of acid production by streptococci was generally higher than that by lactobacilli.
