The effect of hormonization on juiciness and tenderness of chicken meat



Poultry Sci 37(6): 1443-1446



Chickens (148) were tested for tenderness and juiciness. Of these birds 74 were hormonized and 74 were nonhormonized. Results indicate that hormonization had no significant effect on juiciness, of 6- or 10-week-old chickens: hormonization significantly increased juiciness of 14-week-old chickens: female chickens were more juicy than males: hormonization significantly increased tenderness of all the birds tested with the exception of the 6-week-old birds.
