The occurrence and significance of mesophilic bacteria in relation to quality and keeping quality of high quality liquid milk.

Fifty samples of milk from 4 farms producing quality milk for liquid consumption were examined for organoleptic quality (after o, 24, 48, 72 and 96 hr. storage at 20 degrees C), and microflora. Organoleptic examination was found to be a simple and reliable means of detecting changes in the milk. Neither total count nor count of mesophilic caseolytes gave reliable indication of quality or keeping quality.
