Enzymatic and chemical hydrolysis of some grape cultivars have revealed the prominence of some secondary metabolites important for characterization of cultivar. In white and black Francesina grapes, the synthesis of benzenoid compounds is important, while in Primitivo giant, the synthesis of alpha -terpineol and derivatives is predominant, with the surprising presence of gamma -terpineol and 1-terpinen-4-ol after chemical hydrolysis.
